2 Tablespoons Olive Oil
1 Onion, chopped
1 Medium Yellow or Zucchini Squash, diced
1 Red or Orange Bell Pepper, seeded and diced
1 Small Head of Cauliflower, broken into bite sized florets
1 teaspoon Cumin
One 14.5 oz Can Diced Tomatoes (fire roasted)
One 15 oz can Chickpeas, drained and rinsed
Heat oil in a large pot over medium heat. Add onion, squash and pepper and sauté for 5 minutes or until the vegetables are just softened.
Add the cauliflower and cook about 5 more minutes, sprinkle in cumin and cook 1 minute more.
Add in diced tomatoes and chickpeas, cook for about another 5 minutes or until cooked through and cauliflower is softened.
